Chocolate & Banana Protein Cupcakes.
A Friday morning, or any morning for that matter, breakfast treat that I am all for.
Admittedly these didn’t turn out exactly how I pictured…but, they taste better than I thought and sometimes the messiest bakes turn out to be the tastiest, so I’m going with it.
The best bit about this recipe is that all the ingredients are so simple and accessible. I didn’t actually need to leave the house in order to make them! Most of us will have flour, baking powder and vanilla extract lurking around at the back of the baking cupboard and the remaining ingredients, I think, are household staples. Bananas, eggs and apple sauce.
Try pairing one (or two) with a dollop of yoghurt, some almond butter and it makes for a delicious power breakfast or, enjoy them with a scoop of ice cream for an indulgent dessert. Gooey and soft in the middle they also taste delicious as they are.
The recipe can be altered to change the flavour if needs be. Just omit the banana (or protein powder flavour) and add in whatever you fancy. Extra chocolate chips, almonds, dried fruit, the possibilities are endless!
Serving Size.
Makes 12 cupcakes.
Ingredients.
- 30g Free Soul Chocolate Whey Protein powder
- 120g Wholewheat Flour
- 2-3 Ripe Bananas
- 1tbsp Apple Sauce
- 1tsp Vanilla Extract
- 1tsp Vitacoco Coconut Oil
- 1 Egg
- 1tsp Baking Powder
- Choc Shot (for drizzle)

Method.
- Pre-heat the oven to 160 degrees.
- Spray 12 cupcake cases with firelight and set aside.
- In a bowl, add the bananas (keep a little bit back for topping), apple sauce, vanilla extract, coconut oil & egg. Mix until well combined.
- Add the flour, protein powder and baking powder.
- Divide the mixture evenly into the cupcake cases, and bake for 10-12 minutes or until knife comes out clean.
- Leave to cool, then decorate with additional banana and drizzle with choc shot.
- Enjoy!
TOP TIP: The cupcakes cook quicker than you expect, so be sure to keep a close eye on the baking time. A couple of mine were a little bit ‘too golden brown’ (sorry Mary Berry).
