Raw Banana Protein Cheesecake Bites.
I see you using up those questionably brown bananas in your banana bread and I raise you a Raw Banana Cheesecake Bite! Now I know what I’d prefer to try…
You can’t beat a good banana flavoured treat, especially when that treat is a no-bake cheesecake! The best recipes are the ‘no-bake throw it all together and hope for the best recipes’ and that’s sort of what this ended up being!
I used an oaty-protein packed base recipe that I’ve used before but, decided to make up the filling as I went along. The verdict? It turned out pretty perfect! A luscious creamy filling made using cashews, a frozen banana and syrup.
THEN, just when you think it can’t get any better, it’s drizzled with thick dark chocolate. HEAVEN.
Did I mention this recipe is also gluten free, dairy free, vegan AND refined sugar free. It’s full of healthy fats, protein and nutty goodness! So without further a do, get your ingredients ready and get baking!
Serving Size.
Makes 8 squares.
Ingredients.
For The Base –
- 15g Free Soul Chocolate Protein
- 50g Oats
- 60g Sliced Almonds
- 60g Vita Coco Coconut Oil (melted)
- 1tbsp Sweet Freedom Light Syrup
For The Cheesecake Filling –
- 200g Cashews (soaked)
- 1 Banana (frozen)
- 2tbsp Vita Coco Coconut Oil (melted)
- 1tbsp Sweet Freedom Light Syrup
- 1/2 tsp Sea salt
- 1tsp Cinnamon
- 75g Lindt Dark Chocolate (melted)
For The Topping –
- 30g Lindt Dark Chocolate (melted)
Method.
- Using a blender, blitz all the base ingredients together. The mixture should resemble a fine biscuity base.
- Once blitzed, press the mixture into lined tray. Place in the freezer for 10 minutes.
- Blend all of the cheesecake filling ingredients together (minus the dark chocolate) then split this mixture in half.
- Once split, melt the dark chocolate and add this to half of the mixture.
- Spread the chocolate filling over the oat base and return to the freezer.
- Once this layer has had time to firm up, spread the second layer.
- Return the tray to the freezer for 15 minutes.
- Melt the remaining dark chocolate and drizzle over the cheesecake.
- Return to the fridge to set.
- Using a sharp knife, slice into 8 squares.
- Enjoy!
